中秋烤肉 健康美味沾酱自己来(图)

 


利用水果、香草自制烤肉沾酱,美味、营养又健康。

中秋月圆人团圆的时刻,烤肉成为大多数人的首选;除多元挑选烤肉食材,均衡饮食外,奇美医学营养师赖春宏提供DIY制作低钠烤肉酱汁,让烤肉活动美味又健康。

赖春宏建议稀释市售烤肉酱,或运用新鲜蔬果、香料,制作健康又具独特风味的烤肉酱。低钠烤肉酱汁包括低钠蔬果烤肉酱,以芒果(约250克)、凤梨(约300克)、依个人喜好加入蒜泥2大匙、薄盐酱油75c.c.,以开水100c.c.放入果汁机均质后,倒入锅中以小火加热并不断搅拌,煮至浓稠即可。

还有义式香料烤肉酱,将酱油20c.c.、开水80c.c.,依个人喜好加入蒜泥2大匙、藕粉1小匙,倒入锅中以小火加热并不断搅拌,煮至浓稠放凉,然后加入蜂蜜20c.c.、适量柠檬汁、及少许的迷迭香、罗勒或是香草等。

至于海鲜沾酱,则建议民众烤海鲜类食材,只需洒上些许白酒,等食物烤熟后再撒点盐,及沾柠檬汁或百香果汁食用。赖春宏也提醒民众烤肉时,注意要以低温、及减少烤肉的面积与时间,来降低罹癌风险。
